The result retains the sweet-sour complexity that defines balsamic, but in a lighter, brighter, more delicate form — straw-yellow in colour with a fruity, bittersweet flavour and a distinctive but gentle acidity. This Piazza Grande Condimento Bianco No. 4 is produced by Mussini, one of Modena's most respected balsamic producers, and aged for a minimum of four years in oak barrels. The acidity is just 4%, making it noticeably softer and less sharp than standard wine vinegars.
