These are not standard chicken breasts. The slow-growth approach and corn-based diet produce flesh that holds its moisture better, has a subtle sweetness, and develops a noticeably richer flavour than fast-grown poultry. The skin — if you choose the skin-on option — crisps beautifully when pan-seared, turning a deep gold from the natural carotenoid pigments in the maize.
