Urbani Truffle Honey
A truffle honey from Urbani — a blend of acacia honey and chestnut honey infused with 3% summer truffle (Tuber aestivum Vitt.). The acacia provides the delicate, floral sweetness; the chestnut brings a deeper, more robust character with a slight bitterness at the edges; and the truffle adds an earthy, musky undertone that turns what could be a straightforward honey into something altogether more interesting.
The balance is well judged. The truffle is present but does not overwhelm — it sits underneath the sweetness and reveals itself gradually, particularly when the honey is warmed slightly by contact with hot food or room-temperature cheese. This is a condiment, not a cooking ingredient. Its job is to finish a dish or a board, not to be stirred into a sauce.
The classic pairing is aged hard cheese — Parmigiano-Reggiano, Pecorino, mature Comté — where the sweetness of the honey and the earthiness of the truffle meet the salt and umami of the cheese. It also works beautifully spooned over fresh ricotta or burrata, drizzled across a charcuterie board, or used as a glaze on roasted meat in the final minutes of cooking.
Producer: Urbani Tartufi, Italy. Founded in 1852, now in its sixth generation.
Ingredients: Acacia honey, chestnut honey, summer truffles (Tuber aestivum Vitt.) 3%
