Prestigious Alpine cheese from the high pastures of the French Alps, often called the "Prince of Gruyères" for its exceptional quality and complex flavour profile. This hard, cooked cheese is made exclusively from raw cow's milk in the Tarentaise and Beaufortain valleys, where Tarine and Abondance cattle graze on mountain pastures above 1,500 metres. The result is a smooth, ivory-coloured cheese with a natural brushed rind and dense, supple texture.
Beaufort develops rich, fruity flavours with notes of hazelnuts and fresh mountain herbs that reflect the diverse alpine flora the cattle consume. The cheese ages for a minimum of five months, with the finest wheels maturing for over a year to develop deeper complexity. Traditional production methods using copper vats and wooden hoops create the distinctive concave heel that identifies authentic Beaufort.
