
Maison Mayté Chorizo Saucisson
Made by Maison Mayté in the French Basque Country, this chorizo saucisson follows the same five-generation artisan tradition as the rest of the Maison Mayté range. Like all their products, it is made exclusively from Ibaïama pork — a breed raised to a minimum of 11 months and 180kg in the Basque Country, benefiting from the region's combination of Atlantic and Pyrenean air.
The flavour profile is distinctly Basque — paprika-forward with chilli heat, balanced by the natural sweetness of well-raised pork. Firm in texture, slow-cured in a natural casing. A dry-cured chorizo rather than a fresh cooking sausage.
